Anita's Healthy Oatmeal Bites

This is a great recipe for a healthy breakfast or easy grab and go snack. I vary the recipe nearly every time I make it. You can use thawed frozen banana. They produce a sweet-syrup that acts as the glue that binds it together. I like to use mini-muffin tins, but you can use larger ones, a muffin top pan or a glass pyrex dish and cut into squares.
Ingredients
- 3 very ripe banana
- 2 cups of regular oats
- 1 cup raisins
- Olive Oil Spray
- Other great add-Ins…
- toasted almonds or other nuts
- chopped prunes
- chopped dried apricots
- chopped mango
- cherries
- chocolate chips
- toasted coconut
- cocoa powder
- flax seeds
- vanilla extract
Instructions
- Preheat the oven to 325 degrees.
- Add banana to a bowl and mash, add oatmeal (I use Bob’s Red Mill Gluten Free Oats) & raisins. If mixture is too dry add applesauce. If it is too loose add more oatmeal.
- Spray the muffin pan well & add the mixture to each cup.
- Bake for 20-25 minutes. I like to top brown for a few minutes on broil, but you must watch them and not get distracted!
