Broccoli Cheddar Quinoa Cups

Ingredients
  • 1 cup cooked quinoa
  • 3 eggs
  • 1 cup broccoli, finely chopped
  • ½ cup Cheddar cheese, grated
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Cooking spray
Instructions
  1. Preheat the oven to 375 degrees F.
  2. In a bowl, mix all the ingredients together.
  3. Spray muffin molds with cooking spray then fill up each mold with the quinoa mixture.
  4. Bake them in the preheated oven for 30 minutes or until they are cooked through.
