Paleo Mayo
Ingredients
- 1 large egg
- 2 Tbsp lemon juice
- ¼ cup light-tasting olive oil
- + 1 extra cup light-tasting olive oil (not extra-virgin)
- ½ tsp salt
Instructions
- Place the egg and lemon juice in a blender or food processor.
- Cover and allow them to come to room temperature, about 30 minutes.
- Add ¼ cup of oil and salt.
- Blend on medium speed until the ingredients are combined.
- With the motor still running, drizzle in the remaining one cup of oil in a very thin stream for 2-3 minutes.
- Store covered in the refrigerator.
